While Western soups generally boast efficient flavours, the Cantonese depend on the readability and natural sweetness of ingredients, often observed by a nutty crouton. Chinese soups are regarded a dietetic treatment, and a good soup helps the body hold a fit balance of Re Qi. Many Chinese soups are also used to counter the outcomes of "hot" food, which are often regarded bad for the body. Besides providing healthy nourishment, Chinese soups can also be soothing to the body. Another typical Chinese soup is winter melon soup, a delicious dish that originated in Southeastern Asia. This fruit ripens during the summer, making it a superior soup for winter. It also has a long shelf-life, and may be preserved for a year or more. This makes it an excellent choice for the winter months, when fewer vegatables and fruits can be found. Chinese soups are usually broth-based, but some are thickened using cornstarch. Hot and sour soup, for instance, is often thickened with cornstarch. These soups are sometimes topped with beaten egg for extra visual appeal.
